I received free samples of Zespri SunGold Kiwifruit mentioned in this post. By posting this recipe I am entering a recipe contest sponsored by Zespri Kiwifruit and am eligible to win prizes associated with the contest. I was not compensated for my time.

For the most recent Recipe Reduxcontest, we were challenged to “surprise and delight” with a recipe featuring Zespri SunGold Kiwifruit.  I was really excited to start experimenting in the kitchen because I’d never tried SunGold kiwifruit before.  This new variety of fruit is a natural cross between other gold varieties of kiwifruit (non-GMO) and is one of the fastest growing new fruits globally.  With their sweet flavor, pop of color, excellent nutritional profile and culinary versatility, these beauties are a must try!

A healthier take on a classic summer dessert, these shortcakes are sure to please.

Can you believe it’s almost August already?  I feel like summer just started!  The other day I was at my local grocery store and the back to school stuff out was already out!  The end of summer tends to creep up on me even faster now that we live in Florida since schools start early here.  Growing up in New York, we had a little more time to enjoy the lazy days of summer since Labor Day traditionally signaled the start of school.

Nutritious sweet potatoes and a classic summer salad come together in this elegant appetizer.

This month’s Recipe Redux theme is “Get your fruits and veggies in shape… Show us how you’re serving the bounty of gardens and orchards in shapes like ribbons, noodles, cut-outs, or other creative cuts.”  When I read this, my first thought was- perfect!  Finally, I had an excuse to pull my spiralizer out of the closet!  My husband Pete actually got it for me as a gift about a year ago and I think he’s (not so) secretly been a little disappointed that I haven’t been cranking out spiralized dishes every night for dinner.  It’s not that I don’t love my spiralizer- on the contrary, the first time I used it to make zucchini noodles (aka zoodles), they came out great!  The sad truth is that as a food blogger, I tend to get so bogged down with my blog schedule, that it’s hard to find time to just play around in the kitchen and experiment with new tools and recipes.  I know my fellow food bloggers can relate!

Thank you to Chosen Foods for sponsoring this post!  I was selected for this opportunity as a member of the Mambro Sprouts blogger program.  As always, the opinions expressed are my own.

I love classic dishes but sometimes I like to break from tradition and spice them up a little.  My Chicken Salad with a Twist is one of those dishes.  I created this dish when I was looking for something to jazz up my basic chicken salad recipe.  I loved it so much, that I actually put the recipe in my Natural Pregnancy Cookbook.  And no, of course you don’t have to be pregnant to enjoy this dish or any of the dishes in the book!  It actually has over 125 of my best nutritious and wholesome recipes for anyone trying to lead a healthy lifestyle.

Happy birthday to you, happy birthday to you…

No it’s not my birthday, it’s the Recipe Redux’s 5thbirthday!  While I haven’t been a member from the beginning, I’m so happy to be a part of this amazing group of healthy food bloggers.  I think that this month’s theme is one of the best we’ve ever had but it’s also one of the hardest!  We were asked to celebrate each other by choosing a fellow Reduxer and creating a dish inspired by one of their recipes.  The problem is, with so many amazing people in the group, this was such a tough decision!

Ultimately, I decided to feature the one and only Jessica Fishman Levinson from Nutritioulicious.  Why Jessica?  Well, for a few reasons.  Although we’ve never met in person, I kind of feel like we’re kindred spirits in a way.  She’s a New Yorker, she’s a mom, and she’s passionate about delicious and nutritious food, like myself.  We also definitely have a recipe ESP thing going on and there have been plenty of times when we posted similar dishes at the same time.  We even know the same people- it turns out that I went to high school with her sister-in-law!  If I hadn’t moved to South Florida, I have a feeling that Jessica and I would be getting together for coffee or lunch all the time!

Sweet raspberries, tangy lemon curd and creamy yogurt come together in this craveable summer dish!

Stonyfield and prAna have partnered in the #SummerCravings campaign!  I received samples to develop this post.  All opinions expressed are my own.

What are you craving this summer?

For me, summer means taking a little break and slowing down a bit.  What I crave is time off with my family to enjoy the simple things- lazy days at the beach or pool, grilling outdoors, outdoor music festivals, food truck events, etc.  I crave cute summer dresses, colorful salads with vibrant summer vegetables, fresh berries, locally caught seafood, and plenty of sweet treats.

These wholesome, nutritious corn fritters are the perfect snack any time of the day!

We’re always on the go in my house so I usually like to keep healthy snacks around.  If a snack is nutritious, tasty and my toddler likes it too, then it’s a winner in my book.  During a recent trip to the grocery store, I saw fresh corn for the first time this year, reminding me that summer is just around the corner!  As I loaded up my cart with several ears, I started thinking about how I was going to use them.  One of my favorite dishes is Mexican street corn.  It's a simple dish that features grilled corn on the cob slathered with a chili-spiked mayonnaise and rolled in crumbly cheese.  It’s absolutely delicious but can be a bit messy to eat.  So I decided to make an easier, portable, family-friendly version of this delicious street food.

I'm all about summer salads that take advantage of fresh, seasonal ingredients. I love going to the farmers markets in the summertime when they’re brimming with beautiful produce and then coming home and figuring out how to use them in new and delicious dishes.  To me, variety is key when it comes to salads.  The ideal salad has to have lots of different ingredients, flavors and textures to keep it interesting.  My latest favorite summer salad is my Summer Spinach Salad with Grilled Chicken and Creamy Berry Balsamic Dressing.

Simple and delicious, this classic Spanish dish is perfect for casual summer entertaining.

This dish is near and dear to my heart.  It brings back memories of the incredible trip my husband Pete and I took to Spain in 2010 for our five-year anniversary.  It was quite an adventure filled with plenty of amazing sites, culture and of course, food.  Our trip included some time in San Sebastian, a picturesque seaside town and Spain’s culinary capital.  With 15 Michelin stars, San Sebastian is one of the top foodie destinations in the world.

This is a dish that the whole family will love!  Kofta kebabs are common in many parts of the Mediterranean, Middle East and Persia. They’re made with ground meat instead of cubed meat and are packed with flavor.  Think ground beef mixed with fresh parsley, garlic and warm spices like coriander and cumin.  Yum!  Serve them with my creamy tzatziki sauce and some flat bread and you’ve got a delicious and easy meal that’s perfect for casual summer dining.

When people ask me what the key is to easy, nutritious, stress-free cooking, one of the tips I always give is to stock your kitchen well. Having a well-stocked kitchen means that you can make delicious and healthy meals in a pinch without having to make last-minute runs to the grocery store.

Some of the items I always have on hand are dried pasta, whole grains like quinoa, oats and barley, lentils, canned beans, tomatoes and tomato sauce, nuts, capers and olives.  I also keep my freezer stocked with plenty of staples like frozen vegetables, fruit (especially berries), sprouted grain bread, pizza dough, seafood and chicken breast.

This month, the Recipe Redux challenged us to share how we showcase lovely July fruits and veggies, whether it comes from the farmers’ market, a CSA share or a plot of dirt in our backyard.  Unfortunately, I don’t have my own garden but this time of year, the local farmers’ markets are just brimming with beautiful, vibrant produce.

I love summer cooking, don’t you?  When I think of summer recipes, I think of simple dishes that are easy to make and even easier to eat.  I think of recipes that can feed a crowd for a casual backyard get-together, a picnic or even a trip to the beach.  When summer comes around, I definitely prefer dishes that can be popped in the oven or cooked on a grill rather than those that involve sweating over a hot stove!

Making homemade jam has never been easier!  Before the summer officially ends, why not preserve the sweet flavor of your favorite berries by making a batch of jam?  Homemade jam typically requires a lot of time and equipment.  In order to get it to thicken properly, you usually have to use a thickening agent like pectin along with a significant amount of sugar.  My quick and easy Blackberry Chia Jam will take you only about 15 minutes to make and it uses the natural gelling properties of chia seeds.
