When I think about holiday recipes, pumpkin immediately comes to mind.  Pumpkin pie, pumpkin bread, pumpkin spice lattes, you name it- I’m a fan of them all.  If you read my last post, then you know that I’m especially excited about Thanksgiving this year because my family is coming to Florida and I’m doing the cooking.  Because the main course is going to be a big meal, I plan to make just a couple of small but delicious appetizers to whet everyone’s appetites.  My Pumpkin Spice Meatballs with Orange & Ginger Cranberry Sauce are the perfect holiday appetizer.  They’re light, nutritious, and packed with the flavors of fall.  Plus, these adorable morsels are bite-sized, so they won’t fill your guests up too much before the main course.

I love summer cooking, don’t you?  When I think of summer recipes, I think of simple dishes that are easy to make and even easier to eat.  I think of recipes that can feed a crowd for a casual backyard get-together, a picnic or even a trip to the beach.  When summer comes around, I definitely prefer dishes that can be popped in the oven or cooked on a grill rather than those that involve sweating over a hot stove!

My Little Italy Meatball Sliders with Whipped Ricotta are the perfect lightened up entertaining recipe to feed a crowd.




Recently, I had the honor of competing in the Entertaining Recipes Challenge sponsored by the wonderful team from Beef. It's What's for Dinner.  My amazing friend Amee from Amee's Savory Dish invited me to participate- we should all have friends like her!  The challenge was to take a traditionally indulgent entertaining recipe and create a healthier take on it.  Right up my alley!  Although I didn't win the contest, I felt like a winner just being selected to participate (cheesy but true).  And I was happy to learn that top honors went to my dear friend Ally from Ally's Kitchen with her North African Spiced Beef Ribeye Wraps. Yum!


I learned quite a few things about beef while participating in this challenge.  Did you know that there are many cuts of beef that are as lean as a skinless chicken thigh?  These lean cuts of beef have less than 10 grams of fat, 4.5 grams or less of saturated fat, and less than 95 milligrams of cholesterol per 3 ½-oz cooked serving.  Beef is also packed with protein, which keeps you feeling full and satisfied, builds muscle and gives you long-lasting energy.  It's also a rich source of several important vitamins and minerals like B vitamins, iron, zinc, selenium, phosphorus and choline.

In my last post, I shared the recipe for my Greek Chicken Meatballs and told you I'd be back with another recipe using those same meatballs.  It's part of my Cook Once, Eat Twice philosophy of cooking.  I like making a large batch of these delicious meatballs and then using them in lots of other dishes.  These meatballs are very versatile and they freeze well so they're prefect when you need to get a quick meal on the table.  My Greek Meatball Pita Sandwiches are great for a light lunch or dinner.  Simply tuck a couple of meatballs into a pita pocket, add some fresh spinach, tomato and a dollop of homemade tzatziki, and you're ready to go!  You may want to make extra tzatziki- it's great with grilled meat, sandwiches, as a dip for vegetables and much more.

Here's the latest installment of my "Cook Once, Eat Twice" series.  Because of my busy schedule, when I cook dinner, I often like to double the recipe and then transform the leftovers into an entirely different meal on another day.  It's a real timesaver and I also find it to be a fun challenge.  My Greek Chicken Meatballs are full of Greek flavor and easy to make, perfect for a quick weeknight meal.  I use ground chicken breast (which I like to grind myself in my stand mixer) mixed with feta cheese, spices and spinach, which is one of the most nutritious foods you can eat.  Spinach is packed with a wide variety of compounds that are beneficial for your health including several vitamins, minerals and disease-fighting antioxidants. It’s a rich source of fiber and protein as well as Vitamins A, C, K, and folate.  It’s also rich in several minerals like calcium, iron and manganese.  Serve these meatballs alone or over spaghetti with tomato sauce.  They’re also great in soups and sandwiches.  Freeze any leftovers and keep them for busy weeknights.  Your whole family will love them and they won’t even know how good they are for you!  Stay tuned for my next post, where I’ll feature these delicious meatballs in a new recipe- my Greek Meatball Pita Sandwiches.
