I’ve been in a bit of denial about the back to school season.  Of course, I’ve seen all of the back to school stuff out at the stores over the past several weeks but I’ve been trying to hang on to the last days of summer.  You see, this is a big year for our family.  My daughter Sienna is starting preschool five days a week for the first time.  It feels like just yesterday that she was born and all of a sudden she’s all grown up and we’re shopping for backpacks and school supplies!  Can someone please slow down the clock?

This month’s Recipe Redux challenge was to raid our pantry, cupboards, freezer or fridge to find hidden “treasures” and incorporate them into a healthy recipe.  I love this idea because I’m definitely guilty of forgetting what I have in my kitchen sometimes.  I often have good intentions at the grocery store and stock up on plenty of pantry items only to forget about them later.  And what about those times when you buy an ingredient specifically for one recipe and then the rest of the container sits in the fridge forever?  Guilty.  So I scoured my kitchen for this challenge and came up with two worthy contenders- canned chickpeas from the back of my cupboard and an open bottle of tahini from the fridge.  Since I couldn’t choose which one to use, I decided to use both!

We eat a lot of seafood in my house.  Not only is it nutritious, seafood is quick and easy to cook, which makes it perfect for weeknight meals.  Now that I have a toddler, I appreciate this even more.  On most nights, I turn to family-friendly dishes that I know I can get on the table in a short amount of time.

In my last post, I shared the recipe for my Greek Chicken Meatballs and told you I'd be back with another recipe using those same meatballs.  It's part of my Cook Once, Eat Twice philosophy of cooking.  I like making a large batch of these delicious meatballs and then using them in lots of other dishes.  These meatballs are very versatile and they freeze well so they're prefect when you need to get a quick meal on the table.  My Greek Meatball Pita Sandwiches are great for a light lunch or dinner.  Simply tuck a couple of meatballs into a pita pocket, add some fresh spinach, tomato and a dollop of homemade tzatziki, and you're ready to go!  You may want to make extra tzatziki- it's great with grilled meat, sandwiches, as a dip for vegetables and much more.
