I love summer cooking, don’t you?  When I think of summer recipes, I think of simple dishes that are easy to make and even easier to eat.  I think of recipes that can feed a crowd for a casual backyard get-together, a picnic or even a trip to the beach.  When summer comes around, I definitely prefer dishes that can be popped in the oven or cooked on a grill rather than those that involve sweating over a hot stove!

I’m so excited about this months Recipe Redux theme, which is “Two for One.”  It fits right in with the “Cook Once, Eat Twice” series on my blog, where I show you how to make a delicious and healthy recipe and then transform the leftovers into a completely different dish the next day.  It's a real timesaver in the kitchen, especially on busy weeknights.  Plus it’s a great way to make leftovers a lot more fun and interesting!

So for this challenge, I decided to start with an easy, versatile and family-friendly dish- Chicken Teriyaki.  Crispy chicken coated with a glossy, sweet sauce- what’s not to love?

Fried rice holds a special place in my heart.  The year after I graduated from college and was living on my own for the first time, it was the first dish I learned to make.  I pretty much ate nothing but fried rice for a year.  It was fast, easy, convenient and most importantly, cheap!

Peanut butter, sesame oil and soy sauce come together with ginger and garlic in this addictive noodle dish.  A staple on Chinese-American restaurant menus, Cold Sesame Noodles are easy to make at home.  This dish requires minimal cooking time and makes a great appetizer or side dish.  Add some steamed broccoli or grilled chicken and it becomes a substantial main course.  Although they have the word "cold" in their name, the noodles can be served hot, cold or at room temperature.

Unfortunately it’s been an especially brutal winter for a lot of the country.  I’m so grateful to now be living in Florida, but I still remember how rough the winters can get up north. When you’re stuck indoors on a cold day, there’s nothing more comforting than curling up with a hot bowl of soup.  I decided I wanted to make a soup that would fill me up but not leave me feeling heavy afterwards.  So I looked in my pantry and found a packet of soba noodles- perfect!  Soba noodles are Japanese noodles made of buckwheat. They’re often served at room temperature or chilled with a dipping sauce but they can also be served hot in soups.  They cook very quickly so they’re perfect for a delicious, fast weeknight meal.
