Move over French fries, there’s a new fry on the block!  Just when I thought avocados couldn’t get any better, I discovered these beauties.  Coated in panko breadcrumbs and baked to golden, crispy perfection, these crispy avocado fries are not only nutritious- they’re downright addictive!

I’m so excited about this months Recipe Redux theme, which is “Two for One.”  It fits right in with the “Cook Once, Eat Twice” series on my blog, where I show you how to make a delicious and healthy recipe and then transform the leftovers into a completely different dish the next day.  It's a real timesaver in the kitchen, especially on busy weeknights.  Plus it’s a great way to make leftovers a lot more fun and interesting!

So for this challenge, I decided to start with an easy, versatile and family-friendly dish- Chicken Teriyaki.  Crispy chicken coated with a glossy, sweet sauce- what’s not to love?

In my last post I promised you another recipe featuring the delicious Slow Cooker Pulled Chicken that I made.  It's part of my Cook Once, Eat Twice series where I show you how to make a large batch recipe and then use the leftovers in a variety of other dishes. This week I decided to use my leftover chicken to make these scrumptious Pulled Chicken Quesadillas. These quesadillas are a terrific family-friendly meal that you can get on the table in a pinch. You simply layer chicken, shredded cheese and any other desired toppings on tortillas and toast them in a skillet until they're golden brown on the outside with melting, gooey cheese on the inside.

In an informal poll that I recently took on Facebook, I asked what kinds of recipes people wanted me to post.  The most popular response was slow cooker dishes.  It's not surprising considering how convenient slow cooker recipes are. And now that I have a toddler, I appreciate these recipes even more!  With most slow cooker recipes, there's minimum prep- you can simply toss all of the ingredients into the bowl of the slow cooker and turn it on in the morning.  When you get home in the evening, dinner is ready to serve.  This Slow Cooker Pulled Chicken Sandwich recipe is also part of my Cook Once, Eat Twice series where I show you how to make a large batch recipe and use the leftovers in a variety of other dishes.  Besides sandwiches, pulled chicken can be used in soups, salads, omelets, burritos, pasta dishes, casseroles, you name it.  It also freezes well so it's great to have on hand when you need to make a quick meal on short notice.  In my next post I will feature this delicious chicken in my Pulled Chicken Quesadillas.

In my last post, I shared the recipe for my Greek Chicken Meatballs and told you I'd be back with another recipe using those same meatballs.  It's part of my Cook Once, Eat Twice philosophy of cooking.  I like making a large batch of these delicious meatballs and then using them in lots of other dishes.  These meatballs are very versatile and they freeze well so they're prefect when you need to get a quick meal on the table.  My Greek Meatball Pita Sandwiches are great for a light lunch or dinner.  Simply tuck a couple of meatballs into a pita pocket, add some fresh spinach, tomato and a dollop of homemade tzatziki, and you're ready to go!  You may want to make extra tzatziki- it's great with grilled meat, sandwiches, as a dip for vegetables and much more.

Here's the latest installment of my "Cook Once, Eat Twice" series.  Because of my busy schedule, when I cook dinner, I often like to double the recipe and then transform the leftovers into an entirely different meal on another day.  It's a real timesaver and I also find it to be a fun challenge.  My Greek Chicken Meatballs are full of Greek flavor and easy to make, perfect for a quick weeknight meal.  I use ground chicken breast (which I like to grind myself in my stand mixer) mixed with feta cheese, spices and spinach, which is one of the most nutritious foods you can eat.  Spinach is packed with a wide variety of compounds that are beneficial for your health including several vitamins, minerals and disease-fighting antioxidants. It’s a rich source of fiber and protein as well as Vitamins A, C, K, and folate.  It’s also rich in several minerals like calcium, iron and manganese.  Serve these meatballs alone or over spaghetti with tomato sauce.  They’re also great in soups and sandwiches.  Freeze any leftovers and keep them for busy weeknights.  Your whole family will love them and they won’t even know how good they are for you!  Stay tuned for my next post, where I’ll feature these delicious meatballs in a new recipe- my Greek Meatball Pita Sandwiches.
