Did you know that it’s really easy to make your own salad dressing?  My Buttermilk Herb Dressing is simple, delicious and healthy.  Store-bought salad dressings often have a lot of added sugars, preservatives and a surprising number of calories.  However, when you make homemade salad dressing, you can use fresh, natural ingredients and make healthy substitutions as desired.  My Buttermilk Herb Dressing is like a cross between ranch dressing and green goddess dressing- two of my favorites.  It uses fresh herbs, which are abundant this time of year, and it comes together in just a few minutes. By using low fat buttermilk and nonfat Greek yogurt, you can cut back significantly on the amount of mayonnaise used and still have a nice creamy texture.  The fresh herbs, dijon mustard and lemon juice add bright flavor and acidity.  This is a nice versatile dressing that can be used on salads or even as a dip.  Try it with my Butter Lettuce Salad, which features delicate butter lettuce leaves topped with heirloom tomatoes and fresh, grilled sweet corn.

This year, Mother's Day has special meaning for me because it's my first Mother's Day as a mom.  Sienna was born on May 22, 2013 so I just missed it by a couple of weeks last year.  I'm looking forward to a quiet day at home with my family, although we will be celebrating a day late as I'm working on the actual holiday- the life of an ER doctor!  Unfortunately I won't be seeing my mom or my mother-in-law for Mother's Day this year but if they were close by, I would love to cook a homemade meal for them.  For my mom, I would prepare Baked Eggs in Tomato Sauce followed by Lemon Risotto with Spring Vegetables, Shrimp and Grits and finally Banana Cheesecake Stuffed Strawberries.  For my mother-in-law, I would start with Lemon Ricotta Blueberry Pancakes and then move on to Greek Zucchini Fritters, Spinach Gnudi and Chocolate Tofu Pudding.  This year celebrate your mom and show her just how special she is by making her a nice home cooked meal.  I've listed a several recipe ideas below to get you started.  Happy Mother's Day to all of you wonderful, hardworking moms out there!

Are you looking for a crowd-pleasing recipe to serve on Super Bowl Sunday?  If so, try my Lightened Up Spinach Artichoke Dip. This dish is the perfect appetizer that everyone will love to dig into. And it's packed with nutritious ingredients.  Classic Spinach Artichoke Dip has a good amount of mayonnaise, cream cheese, parmesan and shredded cheese, which all add up to a high calorie count. To make my lightened up version, I swap in nonfat Greek yogurt for the mayonnaise. This cuts a large amount of saturated fat. Greek yogurt is naturally thick and creamy and adds a nice tangy flavor. Plus, it's packed with protein and calcium and it's low in carbohydrates.
