I’ve been in a bit of denial about the back to school season.  Of course, I’ve seen all of the back to school stuff out at the stores over the past several weeks but I’ve been trying to hang on to the last days of summer.  You see, this is a big year for our family.  My daughter Sienna is starting preschool five days a week for the first time.  It feels like just yesterday that she was born and all of a sudden she’s all grown up and we’re shopping for backpacks and school supplies!  Can someone please slow down the clock?

What are you craving this summer?


For me, summer means taking a little break and slowing down a bit.  What I crave is time off with my family to enjoy the simple things- lazy days at the beach or pool, grilling outdoors, outdoor music festivals, food truck events, etc.  I crave cute summer dresses, colorful salads with vibrant summer vegetables, fresh berries, locally caught seafood, and plenty of sweet treats.

My daughter Sienna has very interesting eating habits.  Like many kids her age, one day she’ll love something and the next day she’ll refuse to eat it.  But there’s one food that’s remained a constant in her diet from the beginning- yogurt.  She’s loved yogurt since she was a baby and we first introduced her to solids.  If it were up to her, she would probably eat yogurt for breakfast, lunch and dinner!

Are you still looking for last-minute side dish ideas for Thanksgiving?  My Creamy Spinach Gratin is nutritious, easy to make and packed with flavor.  It’s sure to be hit with your guests!


This dish is a healthy makeover of one of my favorite Thanksgiving sides- creamed spinach.  Instead of heavy cream, my version uses Stonyfield nonfat Greek yogurt to thicken the sauce and make it nice and creamy.  Greek yogurt also adds a boost of protein.  Instead of adding a lot of shredded cheese, I stir in just the right amount of Parmesan cheese to give the spinach plenty of flavor.  I like to top the dish off with a breadcrumb mixture and finish it off in the oven to get it crispy and golden brown.

Are you a fan of the pumpkin spice craze that occurs this time of year?  Once fall comes around, the stores start lining their shelves with pumpkin spice products and the internet abounds with pumpkin recipes.  Personally, I’m still a fan of pumpkin spice because I love this time of year.  Since I moved to South Florida, I definitely miss the change of seasons (but not the brutal winters!).  It’s just not the same drinking a pumpkin spice latte in 80 degree weather.  But even if I can’t have the fall weather, I can still enjoy the wonderful autumn flavors.

I'm all about summer salads that take advantage of fresh, seasonal ingredients. I love going to the farmers markets in the summertime when they’re brimming with beautiful produce and then coming home and figuring out how to use them in new and delicious dishes.  To me, variety is key when it comes to salads.  The ideal salad has to have lots of different ingredients, flavors and textures to keep it interesting.  My latest favorite summer salad is my Summer Spinach Salad with Grilled Chicken and Creamy Berry Balsamic Dressing.

I’m a big fan of smoothies.  They’re quick and easy to make and they’re such a great way to get lots of fruits and veggies into your diet.  Plus, my toddler loves them, which is awesome for me because I can add in a whole variety of nutritious ingredients that she normally might not try on their own.  Now that I live in sunny South Florida, I love making smoothies all year round.  It's great being able to take advantage of the abundant fresh produce, but if you live in a cooler climate, you can always use frozen fruit.  In the freezer section of the grocery store, you’ll find plenty of fruits and vegetables that are frozen at their nutritional peak, just waiting to be popped into the blender to make a healthy, refreshing smoothie.

Did you know that babies are influenced even in utero by the foods and flavors we eat?  So spicing up your child’s palate actually begins with you.  During pregnancy, try to eat a varied, healthful diet with a wide variety of flavors because it can affect your child’s future eating habits. Once your little bundle of joy arrives, you can start introducing fresh or dried herbs and spices into their diet as early as around 7-8 months.  In many cultures around the world, babies are introduced to spices at this early age.  Baby food doesn’t have to be bland!  Herbs and spices are a great way to add flavor to your baby’s food without adding less desirable ingredients like sugar or salt. The more flavors your child experiences at a young age, the more likely she is to eat a wide range of foods as she grows up.
