These healthy chicken tenders and tomato poppers are the perfect addition to your summer picnic basket.

Don’t you just love summer?  Everything is just more casual and relaxed when the summer season is underway- including entertaining.  All you need is some good friends, good food, and some cold drinks.  Simple is best when it comes to summer entertaining.  No slaving over a hot stove for hours. I’d rather spend the time outdoors!

This Wild Greens & Quinoa Grain Bowl is easy, healthy and delicious- you can't beat that!

Did you know that March is National Nutrition Month?  I decided to celebrate this occasion by making one of my favorite dishes- a grain bowl.  If you’ve never made a grain bowl before, it’s the perfect vehicle for combining a variety of healthy grains, vegetables, protein and other ingredients, all in one convenient bowl.  It’s an excellent weeknight meal- quick, easy and nutritious.  And it’s also a great way to empty out the contents of your fridge!

Many people start the New Year off with resolutions to eat healthier, and this often includes eating more greens.  But it can be easy to get stuck in a salad rut.  I’m here to tell you that salad doesn’t have to be boring or bland!  There are lots of fun ways to make your salads more interesting.  I personally love adding a variety of ingredients with contrasting flavors and textures like chopped nuts, seeds, dried fruit, and crumbled cheese.

I received free samples of Progresso Cooking Stock mentioned in this post at no cost. By posting this recipe I am entering a recipe contest sponsored by Progresso Cooking Stock and am eligible to win prizes associated with the contest. I was not compensated for my time.

Did you know that bone broth is one of the hottest recent culinary trends?  High quality cooking stock is made by simmering real bones, flavorful vegetables and aromatic herbs for hours.  It’s this process that gives it rich depth of flavor.  That’s how Progresso’s new line of premium Cooking Stocks are made.  All of that flavor is packed into a carton that you can open up and use immediately with none of the work.  It's a great addition to soups, stews, sauces, chili- the possibilities are endless!  And at just 15-45 calories and 0-1 gram of fat per serving, it's a quick and clean way to boost the flavor of any dish.

My healthy makeover of a classic stick-to-your-ribs comfort food is the perfect dish for the holidays.

Back by popular demand, this month’s Recipe Redux theme is Grab a Book & Cook.  Since the Recipe Redux has been around for 54 months, we were challenged to grab a cookbook and make a healthy version of the recipe on page 54 or 154.  What a fun concept!  I have a ton of cookbooks so I started going through them and soon found the perfect recipe to Redux- Chicken and Dumpling Soup from Michael Symon’s Live to Cook: Recipes and Techniques to Rock Your Kitchen.

I'm all about summer salads that take advantage of fresh, seasonal ingredients. I love going to the farmers markets in the summertime when they’re brimming with beautiful produce and then coming home and figuring out how to use them in new and delicious dishes.  To me, variety is key when it comes to salads.  The ideal salad has to have lots of different ingredients, flavors and textures to keep it interesting.  My latest favorite summer salad is my Summer Spinach Salad with Grilled Chicken and Creamy Berry Balsamic Dressing.

I’m so excited about this months Recipe Redux theme, which is “Two for One.”  It fits right in with the “Cook Once, Eat Twice” series on my blog, where I show you how to make a delicious and healthy recipe and then transform the leftovers into a completely different dish the next day.  It's a real timesaver in the kitchen, especially on busy weeknights.  Plus it’s a great way to make leftovers a lot more fun and interesting!

So for this challenge, I decided to start with an easy, versatile and family-friendly dish- Chicken Teriyaki.  Crispy chicken coated with a glossy, sweet sauce- what’s not to love?

In my last post I promised you another recipe featuring the delicious Slow Cooker Pulled Chicken that I made.  It's part of my Cook Once, Eat Twice series where I show you how to make a large batch recipe and then use the leftovers in a variety of other dishes. This week I decided to use my leftover chicken to make these scrumptious Pulled Chicken Quesadillas. These quesadillas are a terrific family-friendly meal that you can get on the table in a pinch. You simply layer chicken, shredded cheese and any other desired toppings on tortillas and toast them in a skillet until they're golden brown on the outside with melting, gooey cheese on the inside.

In an informal poll that I recently took on Facebook, I asked what kinds of recipes people wanted me to post.  The most popular response was slow cooker dishes.  It's not surprising considering how convenient slow cooker recipes are. And now that I have a toddler, I appreciate these recipes even more!  With most slow cooker recipes, there's minimum prep- you can simply toss all of the ingredients into the bowl of the slow cooker and turn it on in the morning.  When you get home in the evening, dinner is ready to serve.  This Slow Cooker Pulled Chicken Sandwich recipe is also part of my Cook Once, Eat Twice series where I show you how to make a large batch recipe and use the leftovers in a variety of other dishes.  Besides sandwiches, pulled chicken can be used in soups, salads, omelets, burritos, pasta dishes, casseroles, you name it.  It also freezes well so it's great to have on hand when you need to make a quick meal on short notice.  In my next post I will feature this delicious chicken in my Pulled Chicken Quesadillas.

In my last post, I shared the recipe for my Greek Chicken Meatballs and told you I'd be back with another recipe using those same meatballs.  It's part of my Cook Once, Eat Twice philosophy of cooking.  I like making a large batch of these delicious meatballs and then using them in lots of other dishes.  These meatballs are very versatile and they freeze well so they're prefect when you need to get a quick meal on the table.  My Greek Meatball Pita Sandwiches are great for a light lunch or dinner.  Simply tuck a couple of meatballs into a pita pocket, add some fresh spinach, tomato and a dollop of homemade tzatziki, and you're ready to go!  You may want to make extra tzatziki- it's great with grilled meat, sandwiches, as a dip for vegetables and much more.
