As a chef and food blogger, I love spending time in the kitchen.  I could spend an entire day braising a stew in the oven, making fresh pasta from scratch or even baking a homemade cake.  I’ve always found cooking to be relaxing and a nice change of pace from my day job in the Emergency Room where I’m usually running around for 12 hours at a time.  But I also have plenty of days when I want to get a nutritious meal on the table as quickly as possible.  This is especially true now that it’s back to school season!

Every now and then, I get a craving for a good burrito.  Although I’ve been known to make late-night runs to the local burrito chain (you know which one I’m talking about), it’s actually quite easy to make your own burritos at home.  And when you make your own burritos, you can stuff them with whatever ingredients you like- chicken, steak, tofu, beans, you name it!  It’s a good idea to make a large batch of burritos so that dinner (and even lunch) is set for a few days.  And the best part is that they freeze well, making them very convenient for those busy days when you need a quick and healthy meal.

Your guests will rave about these adorable bites!  Nutrient-packed sweet potatoes are sliced into coins, roasted in the oven and topped with melted cheddar cheese and chipotle crema.  They’re the perfect, healthy finger food for entertaining.
